Most people don't think of casseroles being a summer meal, but this recipe from Pink-Parsley proved to be a summer casserole winner! The only thing I would suggest to make this recipe easier would be to cook your frozen chicken breast in the crock pot with 1 cup of water on low for 8 hours or high for 4 hours.
