Baked Cheddar Dijon Chicken Tenders

This is a meal I made one evening when I literally had the bare minimum in the pantry and fridge and it turned out so delicious, in fact I'm super surprised I haven't shared it sooner.  I must admit that I was skeptical about the Cheez-Its and the Dijon Mustard, but the flavor combo worked really well together and was a nice departure from a regular Chicken Tender Meal.  Find the recipe from Just A Taste and let me know what you think!

Chicken Cobbler

Apple Pie Pancakes

Like most of us, I try and use fresh produce in a timely manner.  One morning I realized I had an apple that was starting to get a little on the softer side and didn't want to toss it.  After a quick search I found this recipe from Averie Cooks for Apple Pie Pancakes.  Surprisingly, my husband LOVED them and talked about them all week, so it will definitely be a breakfast I make again.

Homemade Alfredo Sauce

Alfredo is a staple in our house, that's my husbands go to meal and we eat it more time than I care to admit.  I was getting a little tired of the same old same old but didn't want to completely ban it from our household.  As always, Pinterest to the rescue!  This Simple Homemade Alfredo Sauce from My Crazy Blessed Life was exactly what we needed to add some pizzaz to a meal we usually use store bought, pre-made ingredients.  Not only was it super simple to make, it was extra creamy and we could season as we pleased.

Sausage, Potato & Kale Soup

I thought this Sausage, Potato & Kale Soup would be the perfect meal in honor of St. Patrick's Day!  I first saw this soup on Pioneer Woman, and my husband said it looked good.  Not a soup that was particularity appealing to me, I still wanted try it out since my husband was so vocal about it.  It really is a delicious hearty soup and i'm glad it appealed to him.

Creamy Balsamic and Herb Chicken

This meal is simply delicious.  It is really flavorful and the herbs blend perfectly with the creamy sauce.  It was great with rice, but I think it would be super tasty over pasta as well!  I apologize for my lack of pictures, I was well into cooking before I realized I hadn't snapped a single photo.  Head over to Mother Thyme for the recipe and her gorgeous photographs.

Baked Eggplant Parmesan

I can only remember having Eggplant Parmesan one time in my life.  We were spending the summer at my Grandmother's house with a few of our cousins.  Eggplant Parmesan was on the menu and none of us were looking forward to it, one of my cousins got lucky and went out with one of his friends and got to eat McDonald's for dinner leaving the rest of us to force down this delectable dish.

Garlic Meatball Subs

This meal has really become a staple on our dinner menu.  It may be a little messy to eat, but it is so worth it.  The first time I made these, I melted the cheese on top thinking it would hold the bun together(pictured below), that didn't work out to well.  The second time I melted the cheese in the bun then topped with meatballs, peppers & onions and the sandwich stayed together almost perfectly.  You can find the recipe at My Cooking Spot.  Enjoy!

Brussel Sprouts with Balasmic and Cranberries

Growing up we were never introduced to Brussels Sprouts because neither of our parents particularly cared for them.  As an adult I enjoy trying new foods especially when they combine flavors that I love like cranberries and balsamic.  Thanks to the Pioneer Women for this delicious recipe.
